Risotto de Toamna
Ingredients: rice, porcini mushrooms, pumpkin, onion, eggplant, leek.
Quantity: 250gr.
Preparation method: Fry the contents with 2 tablespoons of olive oil for 5 minutes. Add 50 ml of white wine and let it boil until it evaporates. Gradually add, in small doses, 650 ml of broth or water and leave over low heat. At the end, mix with a little butter and then grate parmesan cheese to give it a creamy texture. Season to taste.
Keep in a cool, dry place.
